Here, we swirl lightly sweetened tahini in with our Zucchini Double Chocolate muffin + bread mix, to add a delicious dimension to these chocolatey and satisfying muffins. Think peanut butter and chocolate with a modern twist!
- One bag 'Okina Zucchini Double Chocolate Muffin + Bread Mix
- 1 cup shredded zucchini, lightly squeezed
- 1 cup applesauce
- ½ cup milk of choice
- ½ cup well stirred tahini
- 2 tbsp. maple syrup or your preferred liquid sweetener
Mix the tahini with the maple syrup till well blended, and set aside.
Follow the directions for the zucchini double chocolate muffins, as indicated on the bag, to make the muffin batter.
After the muffin batter has been scooped into the muffin tin, spoon about 1 tbsp. of the tahini mixture over each muffin and swirl with a small knife or chopstick.
Bake at 375 degrees for 25 – 28 minutes. Allow to cool slightly before removing muffins from the tin. Drizzle additional tahini/maple over the muffins for an extra special treat!
